Capri-Torte with strawberries or raspberries – creamy vanilla-nut cake with chocolate

The Capri cake is a special celebratory cake with several delicious layers. Crispy, delicate walnut sponge layers , fruity strawberry or raspberry filling, a rich vanilla cream, and a light cream cheese frosting combine to create a wonderfully diverse flavor.

A thin layer of dark chocolate between the fruit and cream creates a subtle chocolate contrast and makes the cake a real visual highlight.

This Capri-style cake with strawberries or raspberries is perfect for birthdays, holidays, family celebrations, and special coffee gatherings. It’s best prepared the day before so the layers can set overnight and the flavors can meld together.

Ingredients
For the 3 walnut bases
For a floor :

4 egg whites
4 tablespoons of sugar
4 tablespoons ground walnuts
1 tbsp flour
The following are needed for three floors in total:

12 egg whites
12 tablespoons of sugar
12 tablespoons ground walnuts
3 tablespoons of flour
For the fruit filling
400g strawberries or raspberries
150 g sugar
200 ml water
1 packet of vanilla, strawberry or raspberry pudding
5 g gelatin
2 tablespoons of water for the gelatin
For the chocolate layer
100g dark chocolate
2 tablespoons of oil
For the vanilla cream
12 egg yolks
200 g sugar
750 ml milk
3 packets of vanilla pudding powder
250 g butter
For the whipped cream
200 ml whipping cream
50 g cream cheese
3 tablespoons of icing sugar
preparation
1. Bake walnut cake bases
Preheat the oven to 200 °C (top/bottom heat) .

Line a 24 cm diameter springform pan with baking paper.

Beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the sugar and continue beating for about 10 minutes until a firm and glossy meringue is formed.

Carefully fold in the ground walnuts and flour using a dough scraper.

Spread the mixture evenly in the springform pan and bake for about 10-15 minutes , until the base is lightly golden brown.

Repeat the process twice more, resulting in a total of three walnut bases .

2. Prepare the fruit filling
Mix the gelatin with 2 tablespoons of water and let it swell.

Simmer strawberries or raspberries together with the sugar for about 10 minutes .

Mix the pudding powder with water until smooth and add to the fruit mixture while stirring constantly.

Let it cook for a few more minutes until the mixture thickens considerably.

Stir a spoonful of the warm fruit filling into the soaked gelatin. Then add everything back to the fruit mixture and mix thoroughly.

Let the fruit filling cool down slightly.

3. Cook the vanilla cream
Mix the egg yolks and sugar until creamy.

Add vanilla pudding powder and 200 ml of milk and mix until smooth.

Bring the remaining 550 ml of milk to a boil.

Stir a little hot milk into the egg yolk mixture. Then put everything back into the pot.

Cook for 2-3 minutes , stirring constantly , until a thick vanilla cream forms.

Cover the surface directly with cling film and allow to cool completely.

Beat the softened butter until creamy and gradually stir in the cooled vanilla cream.

4. Prepare the whipped cream
Whip the cream until stiff.

Mix cream cheese and powdered sugar until smooth.

Gently fold in the whipped cream.

5. Chocolate layer
Gently melt the dark chocolate together with the oil over a water bath or in the microwave.

Stir until smooth and let cool briefly.

Assemble the Capri cake
First, spread each walnut base with the fruit filling .

Once the fruit layer has firmed up a bit, spread a thin layer of melted chocolate on top.

Place some of the vanilla cream on the first layer, followed by some of the whipped cream.

Place the second walnut base on top and repeat the process.

Finish with the third floor.

Place the cake in the refrigerator for at least several hours, preferably overnight .

Before serving, decorate as desired with whipped cream, fresh berries, chocolate or chopped walnuts.

💡 Tips for a perfect Capri-Tart
Raspberries provide a more intense, slightly acidic fruit note.
Strawberries taste somewhat milder and sweeter.
The fruit filling should only be lukewarm before serving .
Apply the chocolate layer as thinly as possible so that the cake can be cut more easily later.
The vanilla cream and the butter should be at approximately the same temperature when mixed.
For a particularly beautiful cut, chill the cake overnight .
A hot, dry knife ensures particularly clean slices of cake.

The Capri-Tart should be well covered and stored in the refrigerator. It will keep for about 3-4 days .
